Atta vs Whole Wheat Flour: Soft Chapathis at Home

Do you really need Indian atta for good chapathis? I made them side by side with supermarket whole wheat flour, and here's how to make them, plus the verdict.

  1. 1
Measure. 1 cup of flour makes about 4–5 medium chapathis. Add a pinch of salt.
  2. 2
Add water: half the amount of flour. 2 cups atta → 1 cup water. Knead about 2 minutes (a food processor with a dough hook works great).
  3. 3
Rest the dough about 10 minutes (even a couple of minutes helps).
  4. 4
Too sticky? Add a heaped tablespoon of flour and knead again. ½ tsp olive oil makes it softer and easier to roll.
  5. 5
Roll. Make a small ball, press into a disc, dip in dry flour and roll with gentle pressure, rotating it to keep the thickness even.
  6. 6
Cook on a hot pan (medium-high). After about 30 seconds, when bubbles form and it's half-cooked, flip. Cook the other side another 30 seconds.
  7. 7
Puff it. Flip again and press gently with a spatula. Steam builds up and it puffs fully. That's what makes it soft and layered.
  8. 8
Finish with a little ghee on top.

💡 Extra tips, not in the video Bonus tips

Use lukewarm water instead of cold water: the dough comes together more easily and the chapathis turn out even softer.
Look & feel. Supermarket whole wheat flour is coarser and darker; atta is smooth and lighter.
Kneading: atta ★★★★★, whole wheat ★★★★½ Whole wheat flour didn't take the standard half-measure of water, so I had to add flour.
Rolling: both ★★★★★ Both were easy to roll.
Cooking: atta ★★★★★, whole wheat ★★★ The whole wheat chapathis didn't puff up. The big difference for me.
Taste: both ★★★★★ Whole wheat was less soft but tasted surprisingly good.
So do you need atta? For soft, fluffy chapathis, yes. But supermarket flour works if that's what you have. Find the right water amount once, and it's consistent after that.
