Curd Rice and Potato Fry

Also known as thayir sadam, dahi rice

The ultimate South Indian comfort meal: cool, creamy curd rice with a crackling mustard tempering, and spicy potato fry with crispy golden edges.

Did you know? In South India, curd rice is traditionally the last course of a meal, eaten to cool down after spicy food.

Curd rice

  • 2 cupsbasmati rice (1 cup serves 2)
  • 6 cupswater, for boiling (any generous amount)
  • 1 inchginger (double it if you like ginger)
  • 1green chilli (2 if mild)
  • 2curry leaves for the paste (optional)
  • 1½ tspsalt
  • 1 kgplain yogurt (curd): add gradually, you may not need it all

Tempering

  • somecoconut oil (or any oil)
  • 1 tspblack mustard seeds
  • 1whole dried red chilli, broken in 3
  • a fewcurry leaves

Potato fry

  • 650 gpotatoes (2 large), in small cubes
  • 1¼ tspsalt
  • 2 tspKashmiri chilli powder (less if using regular)
  • ½ tspturmeric powder
  • 3 tspcoriander powder
  • ½ tspamchur (dry mango powder)
  • ¼ tspgaram masala
  • a littlecoconut oil
  • 1 tspcumin seeds
  • ¼ cupwater
  1. 1
Wash the rice. Rinse and drain 2 cups of basmati at least twice to remove excess starch.
  2. 2
Boil it in plenty of water (about 6 cups) on high heat. You'll strain it, so the exact amount doesn't matter.
  3. 3
Make the ginger-chilli paste. Grind the ginger, green chilli and 2 curry leaves with 2 spoons of yogurt so the mixer can make a smooth paste. Or crush them in a mortar.
  4. 4
Cook and drain. Lower the heat once it boils. When a grain tastes fully cooked, drain in a colander.
  5. 5
Let the rice cool. Cold yogurt on hot rice can curdle.
  6. 6
Add salt and yogurt. 1½ tsp salt, then mix in the yogurt a little at a time, scraping from the bottom, until creamy: between solid and liquid.
  7. 7
Stir in the ginger-chilli paste, and more yogurt as needed. I used almost the whole 1 kg.
  8. 8
Tempering. Heat oil on medium-high, add 1 tsp mustard seeds and wait for them to pop. Add the broken red chilli and curry leaves and sauté 30 seconds.
  9. 9
Pour it over the rice and mix. Use a spoon of rice to wipe the mustard seeds out of the pan.
  10. 10
Potato fry: cube the potatoes (about 650 g) and toss them in a bowl with the salt, chilli, turmeric, coriander, amchur and garam masala.
  11. 11
Fry. Heat a little oil on medium-high, add 1 tsp cumin seeds for 10–15 seconds, then the potatoes. Mix to coat.
  12. 12
Add ¼ cup water, cover and cook about 10 minutes, stirring now and then, until a fork goes in easily and the edges are golden and crispy.

Tips from the video

Cool the rice first so the yogurt doesn't curdle.
Rice drinks yogurt. Add it gradually. The amount depends on your rice.
Make it a little looser than you want. It thickens as it sits.
Even better the next day. I always make extra; the yogurt settles in.
Rescue the mustard seeds with a spoonful of rice to wipe the pan.
More coriander than chilli is my rule for spice mixes like this.

💡 Extra tips, not in the video Bonus tips

Add crunch: grated cucumber, carrot or pomegranate seeds are popular stir-ins.
Packing it for lunch? Add a splash of milk so it stays creamy until lunchtime.
