Cherry Jam: 3 Ingredients, No Pectin

Low-sugar cherry jam with just cherries, sugar and lime, made over two days to save on stirring, and vacuum-sealed to keep for a year.

Did you know? The Swiss town of Zug is famous for its Kirschtorte, a cake soaked in Kirsch, the cherry brandy distilled from small dark cherries. Read my story →

Ingredients

  • 1 kgcherries, washed, stemmed and pitted
  • 400 gsugar (brown, white, or a mix): makes a 60% fruit jam
  • ½lime, juiced

Equipment

  • cherry pitter
  • potato masher, parchment paper
  • glass jars with NEW lids, and a funnel
  1. 1
Wash the cherries and remove the stems.
  2. 2
Pit them. A lever-style pitter makes this much quicker.

  3. 3
Add sugar: about 400 g per kg of fruit, depending on how sweet your cherries are. Mix well.
  4. 4
Add lime juice: half a lime per kg. No preservatives needed.
  5. 5
Day 1: heat on high for about 10 minutes, until the sugar fully dissolves.
  6. 6
Rest overnight. Cover with parchment paper and leave for 24 hours. It thickens naturally.
  7. 7
Day 2: reheat. (You can also heat 10 minutes and rest another night.) Mash with a potato masher and stir until thick enough.
  8. 8
Sterilise the jars and funnel in boiling water for at least 10 minutes, and the new lids in hot water for about 5.

  9. 9
Bottle while slightly loose. It thickens further as it cools and in storage.
  10. 10
Dry the lids and funnel with paper towel without touching the insides.
  11. 11
Fill the jars while the jam is hot.
  12. 12
Close gently, not too tight, and turn the jars upside down for a few minutes before turning back.
  13. 13
Check the seal. Press the centre of the lid. If it pops, it isn't sealed yet. A sealed lid makes its own pop as it seals.

Tips from the video

The two-day method naturally reduces the jam overnight, so there's far less stirring.
Always use new lids. You can reuse jars, but not lids.
Bottle it loose. Jam thickens as it cools; too thick in the pot means too stiff in the jar.
No pectin, no preservatives. Just sugar and citrus, and it still keeps over a year outside the fridge.
Hot jam, hot jars. Fill while hot so the vacuum seal forms.

Lid didn't seal? Keep that jar in the fridge and use it within a few weeks.
Once opened, store the jar in the fridge.
The story behind the dish

The two-day jam hack

The one issue I find with jam recipes is that they take a lot of physical effort. With cherries especially, you first have to pit them, which takes a lot of time, and then make the jam and stir it continuously. It's normally a very tiring day.

The inspiration for this version came from a French method a friend told me about: you stir the jam for just 10 minutes and then rest it overnight. The next day, a) you're less tired, and b) you need to stir a lot less, because the mixture naturally loses water overnight.

To me, this method is a genius hack that really, really works! It's the one recipe I diligently follow every year with fresh cherries from my garden. Sometimes I even rest it for two days or more, if I don't get time to finish it the next day.
