Oven-Roasted Broccoli & Broccoli Soup

Two easy broccoli recipes for beginner cooks: crispy oven-roasted broccoli with garlic and chilli, and a creamy broccoli soup made in an Instant Pot or a regular pot. From my University Cooking Series.

Did you know? Broccoli, cauliflower, cabbage, kale and Brussels sprouts are all one plant species, bred by farmers from wild cabbage.

Roasted broccoli

  • 1broccoli: florets plus the peeled stalk
  • 1clove garlic, chopped (or garlic powder)
  • ½ tspsalt
  • 1 tspchilli powder
  • 1 tbspolive oil

Broccoli soup

  • 1broccoli, cut into small pieces, stalk included
  • 2cloves garlic, chopped
  • 2small shallots, roughly chopped
  • 1 tbspolive oil
  • 1 tspsalt
  • to tasteblack pepper, plus freshly ground pepper to finish
  • 2½ cupswater (more if using a regular pot)
  • 1 cupmilk

Equipment

  • baking tray and parchment paper
  • Instant Pot or pressure cooker (or a regular pot)
  • hand blender
  1. 1
Preheat the oven to 180°C (350°F).
  2. 2
Prep the stalk. Peel the tough outer layer of the stalk and slice it; it's as good as the florets.
  3. 3
Snap the florets off by hand, twisting them away from the stalk, so you get whole florets. A knife is fine too.
  4. 4
Chop the garlic: 1 clove, peeled.
  5. 5
Season. In a bowl, add ½ tsp salt, 1 tsp chilli powder, the garlic and 1 tbsp olive oil, then mix with your hands until every floret is coated.
  6. 6
Spread on the tray. Lay the florets and stalk pieces evenly on a tray lined with parchment paper.
  7. 7
Roast 25 minutes on the convection setting, until vibrant green with lightly browned, crispy edges.
  8. 8
Soup: cut the second broccoli small, stalk and all, using a knife. Small pieces blend more easily.
  9. 9
Chop 2 cloves garlic and 2 small shallots. Thick slices are fine, as everything gets blended.
  10. 10
Heat the pot. Set the Instant Pot to sauté for 4 minutes (or a regular pot on medium heat). When it's hot, add 1 tbsp olive oil.
  11. 11
Sauté the garlic for about 30 seconds (no need to brown it), then add the shallots for another 30 seconds.
  12. 12
Add the broccoli and sauté everything together for about a minute.
  13. 13
Season with 1 tsp salt and black pepper. No chilli in this one.
  14. 14
Add 2½ cups water and pressure cook for 5 minutes, then release the steam. In a regular pot, add more water and simmer longer, until the broccoli is soft.
  15. 15
    Stir in 1 cup milk.
  16. 16
Blend with a hand blender right in the pot, moving it around until smooth.
  17. 17
Finish with freshly ground black pepper and serve.

Tips from the video

Don't bin the stalk. It's as edible and nutritious as the florets; just peel the hard outside.
Snap, don't cut, the florets for the roasted version: you get whole, neat pieces.
Garlic + broccoli is a classic combination. Garlic powder works if you have no fresh garlic.
Go easy on salt for the roasted broccoli: it's mixed all over, so too much is easy to taste.
Use it everywhere: on its own, with a dip, or in my Alfredo pasta instead of chicken.
No pressure cooker? Make the soup in a regular pot: add more water and cook longer.
More salt in the soup than in the roasted version, because the water and milk dilute it.
Milk makes it creamy. It won't taste of milk, just rich and smooth.
Make it dinner. The soup is filling, keeps in the fridge and reheats well the next day.

💡 Extra tips, not in the video Bonus tips

Space them out on the tray so they roast rather than steam.
Air fryer version: about 8–10 minutes at 180°C, shaking halfway.
