Kerala Mixture

Also known as Bombay mix, Madras mix, namkeen mixture

My mom's crispy, spicy mixture (also known as Bombay mix or Madras mix) with boondi, sev, peanuts and roasted gram.

Did you know? In the UK, this snack is sold as “Bombay mix”, though it’s made all over India. Read my story →

Flour mix

  • 2 cupsbesan (gram / chickpea flour)
  • 1 cuprice flour
  • 1 tspmelted butter (just over 1 tsp)
  • 1¼ tspsalt
  • 1 tspchilli powder
  • ½ tspasafoetida (hing)

Water

  • 1½ cupsfor the boondi batter (1 cup, then ½ cup more)
  • ½ cupfor the sev dough

Add-ins & seasoning

  • a handfulpeanuts, roasted and skinned
  • a handfulroasted gram (roasted chickpeas)
  • for fryingsunflower oil
  • 1 tspsalt, dry-heated
  • 1 tspchilli powder, dry-heated
  • a few sprigscurry leaves, fried until fully dry

Equipment

  • perforated ladle (for boondi)
  • sev maker / chakli press with a round-hole disc
  1. 1
Roast the peanuts. 16 minutes at 160°C (or in a pan). Cool, rub off the skins, and blow them away, outdoors or over the sink.
  2. 2
Warm the roasted gram until very light brown, for crunch and flavour.
  3. 3
Make the flour mix. 2 cups besan, 1 cup rice flour, a little melted butter, salt, chilli and hing. Mix until uniform and slightly lighter than besan.
  4. 4
Divide in two: one half for sev, one half for boondi.
  5. 5
Boondi batter. Add 1 cup of water, then about ½ cup more, until it's like dosa or crêpe batter. Mash out any lumps.
  6. 6
Sev dough. Only ½ cup of water, for a thick, chapati-like dough.
  7. 7
Heat sunflower oil and keep a plate of water by the side for the ladle.
  8. 8
Fry the boondi. Hold the ladle over the really hot oil and pour a big spoon of batter through it. Stir now and then until really crispy and slightly brown. Drain on paper towel.
  9. 9
Wipe the ladle underside between batches to keep the boondi round.
  10. 10
Make the sev. Fill the press, close tightly, and turn the handle over the oil in a circular motion. Flip once, fry until brown and crispy, and lift out in one piece.
  11. 11
Dry-heat the seasoning: salt, chilli powder and curry leaves, until there's no moisture left.
  12. 12
Mix it all. Boondi, sev, peanuts, roasted gram and seasoning in a big bowl. Break the sev with your hands as you mix.
  13. 13
Taste. Want more heat? Add more chilli powder, but heat it first.

Tips from the video

Crispy, not soft. Unlike boondi for laddus, this boondi must be really crispy. Be patient.
Wipe the ladle every time. Batter stuck to the bottom distorts the round shape.
No moisture, ever. Heat the salt, chilli and curry leaves dry. Moisture ruins a dry snack.
Break the sev at the end, with your hands while mixing, so it coats evenly.
Pick your sev size. A bigger or smaller disc sets how thick the strands are.
It keeps for a long time in a cool, dry place, if it lasts that long!

💡 Extra tips, not in the video Bonus tips

Cool completely before storing in an airtight jar, or condensation will soften it.
Make it your own: fried cashews, cornflakes or a pinch of sugar are popular additions.
The story behind the dish

Mom's after-school snack

I have to thank my mom again for this recipe. She's a master chef of Indian snacks: laddus, mixture, samosas, diamond cuts… all those little snacks I used to enjoy when I came back from school in India.

When I started cooking, this was on my 'to do, but difficult' list, as it takes a bit of time to cook the sev and the boondi separately. The great thing is that even a small amount of besan (chickpea flour) gives you a lot of crispy mixture.

And coincidentally, I made it again today, this time following my own recipe on this website. It turned out great!
