Kerala Fish Curry with Salmon

Also known as Kerala meen curry, fish curry with kudampuli

A spicy, tangy South Indian fish curry made special by three ingredients: fenugreek, tamarind and kudampuli (Malabar tamarind).

Did you know? Kudampuli, the smoky “fish tamarind” in this curry, is the same Garcinia cambogia fruit that’s sold worldwide in weight-loss supplements. Read my story →

Fish & base

  • 3salmon fillets, cut in medium cubes (or kingfish, snapper, tilapia)
  • 8small onions, sliced lengthwise
  • 2large tomatoes, sliced lengthwise
  • 8cloves garlic, chopped
  • a small pieceginger, sliced
  • someoil (I use coconut oil)
  • a pinchfenugreek seeds
  • a couplecurry leaves
  • 55 ggrated coconut (50–60 g; thawed frozen is fine)

Spices

  • 1½ tspsalt (to taste)
  • 1 tspturmeric powder
  • 1 tsphot chilli powder
  • 3 tspKashmiri chilli powder (colour, not heat)
  • 5 tspcoriander powder

Sourness

  • a small balltamarind, in lukewarm water
  • 3small pieces kudampuli (Garcinia cambogia / Malabar tamarind)

Seasoning

  • somecoconut oil
  • somemustard seeds
  • 2whole dried red chillies, broken in two
  • a fewcurry leaves
  • 2small onions, chopped
  • 4cloves garlic, chopped
  1. 1
Prep. Cube the salmon, slice the onions and tomatoes lengthwise, chop 8 cloves of garlic and slice a small piece of ginger.
  2. 2
Fenugreek first. Heat oil and add the fenugreek seeds, without letting them burn.
  3. 3
Sauté the ginger, garlic and onions until transparent.
  4. 4
Add curry leaves and tomatoes, and cook until the tomatoes are soft.
  5. 5
Add the spices: salt, turmeric, 1 tsp hot chilli, 3 tsp Kashmiri chilli and 5 tsp coriander powder. Roast until the raw smell goes.
  6. 6
Add the coconut (50–60 g) and roast briefly.
  7. 7
Cool it down. Add ½ cup of water, turn off the heat and let it cool before grinding.
  8. 8
Make tamarind juice. Mash and squeeze the tamarind in lukewarm water; discard seeds and fibres.
  9. 9
Grind the masala to a fine paste and return it to the pan, rinsing the jar with a little water.
  10. 10
Add the tamarind juice and kudampuli (3 small pieces), plus water for a medium-thick gravy. Bring to a boil.
  11. 11
Add the fish. Gently place the salmon in the boiling gravy, separate the pieces so they're immersed, and cook about 10 minutes.
  12. 12
Seasoning. Heat coconut oil, pop the mustard seeds, add the broken red chillies, curry leaves, chopped onions and garlic. Fry until golden brown.
  13. 13
Pour the seasoning on top and serve. Traditionally with steamed cassava (tapioca), or rice.

Tips from the video

Three special ingredients. Fenugreek (a must in fish curries), tamarind, and kudampuli for that signature Kerala tang.
A little coconut only. It adds richness, but too much and it starts tasting like a Thai curry.
Mix two chilli powders. A little hot chilli for heat, Kashmiri for colour.
Cool before grinding. Adding ½ cup of water to the hot masala cools it quickly.
Be gentle with the fish. Add it only once the gravy boils, and separate the pieces carefully.
Any firm fish works. Swap salmon for kingfish, snapper or tilapia.

💡 Extra tips, not in the video Bonus tips

Swirl, don't stir, once the fish is in, so the pieces stay whole.
Make it ahead: kudampuli fish curries are famously even better the next day.
The story behind the dish

One of many Kerala fish curries

There are many versions of fish curry in Kerala. This one is inspired by the okra tamarind curry my mom makes, and it has coconut in it. The gravy is quite thick and tasty.

The other well-known version, without coconut or tomatoes, is spicier. It works well if you make the curry a day ahead and eat it the next day, a popular way to let the flavours soak properly into the fish.
