Mint & Coriander Chicken

Also known as green chicken, hariyali chicken

Quick, juicy 'green magic' chicken in a fresh mint, coriander, pepper and lime marinade, shallow-fried until golden.

Did you know? If coriander tastes like soap to you, blame your genes: a variant of a smell-receptor gene makes some people taste soap.

Chicken

  • 200 gchicken breast (2 pieces), cut in pieces
  • someoil for shallow frying (I use coconut oil)
  • to garnishonion rings

Green marinade

  • a big handfulcoriander leaves
  • a handfulmint leaves
  • 2green chillies (1–2 medium)
  • ½ tspblack peppercorns
  • ¼ tspgaram masala
  • ½ tspsalt (to taste)
  • 1 cmginger
  • optionala couple of garlic cloves
  • ½lime, juiced
  • ¼ cupwater (a little less)
  1. 1
Blend the marinade. Coriander, mint, green chillies, black pepper, garam masala, salt, ginger and lime juice, with a little under ¼ cup of water, to a very fine paste.
  2. 2
Marinate. Cut the chicken and mix it with the marinade. Rest 20 minutes, or cook straight away.
  3. 3
Shallow fry. Heat oil on medium for about a minute. Lift the chicken pieces out of the bowl, leaving the liquid behind, and fry, turning, for 5–10 minutes until golden brown.
  4. 4
Add the rest of the marinade over the chicken and mix. It makes it juicier.
  5. 5
Serve with onion rings and plain rice.

Tips from the video

No time to marinate? The marinade is so flavourful you can fry straight away.
Leave the liquid behind when you first put the chicken in the pan, so it fries rather than stews.
Pour the rest in at the end for a juicy, saucy finish.
Chillies vary. My tiny homegrown ones equal about 1–2 medium green chillies.

Use thighs for an even juicier result that's harder to overcook.
Don't crowd the pan, so the pieces brown instead of steaming.
